For nearly a decade, The Healthy College Cookbook has offered time-pressed, budget-crunched students a simple way to enjoy home cooking in their own campus apartments or even in dorm rooms. The first edition was so successful, it returned to print 17 times, with over 80,000 copies in print.
In this revised, expanded edition, University of Massachusetts junior Rachel Holcomb, in conjunction with Storey’s editors, has added 100 brand-new recipes from over 50 current college and university students, and updated some treasured old favorites, while keeping the price at it’s original $14.95. Readers will find plenty of cooking and eating options, including vegetarian and vegan meals, foods prepared on the George Foreman Grill, and toppings for pita and English muffin bases. Nutritional information is included for each recipe and most of the dishes are as nutritious as they are creative and easy. Almost all can be prepared in the time it takes to order a pizza delivery.
Not just for cooking newbies, The Healthy College Cookbook includes plenty of recipes for discerning palates. Just try not to salivate when taking a look at the ingredients for dishes like Potato-Leek Soup, Chicken-Bulgar Salad with Cranberry Vinaigrette, Lemon-Asparagus Pasta, Lime-Basil Mahi Steaks, and Slow Cooker Barbecue Chicken. ABOUT THE AUTHORS
Alexandra Nimetz, Jason Stanley, and Emeline Starr were students at Williams College in Williamstown, Massachusetts, during the writing and production of the first edition of the cookbook. They are all self-taught cooks who enjoy cooking and eating healthfully. They researched all the recipes passed onto them by family and friends, taste-tested each dish, and judged them all according to preparation time, effort, taste, and expense. For this second edition, current University of Massachusetts student Rachel Holcomb has updated and added new recipes for today’s college students seeking out healthier meal options. Rachel lives in northern Vermont.
