(HealthNewsDigest.com) – It is officially fall and finally soup season – my favorite time of the year! The weather is becoming beautifully brisk, football games fill up the weekend, and a big pot of simmering soup is often on my stove. A hearty and satisfying meal on the table is simple with these belly-filling and heart warming soups. One-pot meals are great because they leave easy cleanup, without the hassle of tons of dirty dishes, they feed a crowd and can easily be frozen in batches for dinner another day. I cannot wait to share with you my must-try “soup-er”easy suppers!
Italian Wedding Soup: Think of this as a first-rate chicken soup with mini-meatballs and loads of flavor. If you have never had it you are in for a delicious surprise.
Orzo is a rice shaped pasta used in this soup.
When reheating, add more broth if too thick.
Potato Soup: A warm bowl of fantastic comfort food.
This economical meal can easily be made vegetarian by substituting vegetable broth.
Top with cheese and green onions (I always do).
Serve with a salad or sandwich for a fantastic autumn meal.
Shrimp, Crab, and Corn Soup: An easy, yet lusciously sweet, savory and creamy seafood soup.
Claw crabmeat has a distinct sweetness and is a slightly brown color. It is less expensive and often used in soups, gumbos, and stuffings.
If you would like, omit the crab and just add more shrimp – it is just as delicious!
