(HealthNewsDigest.com) – Are you so over cooking? If you are like me, your whole family came in for the holidays keeping you running around the kitchen and left you with a sink full of dishes. Don’t get me wrong, I love to cook and entertain, but after the hectic holidays, I just want a simple delicious meal on the table fast. Here are a few of my favorite healthy dishes that basically cook themselves.
Speedy Chicken Chili: A perfect bowl of satisfying hearty soup from easy pantry-friendly ingredients.
Look for chipotle salsa to give this excellent, easy-to-make chili a rich, smoky flavor that’s hard to beat – you can enjoy the flavor without working with the chipotle peppers.
Rinsing and draining canned beans can reduce sodium by 41%.
For a short-cut, use pre- cooked, grilled whole chicken breast fillets (great grilled flavor) or rotisserie chicken.
Bourbon Glazed Pork Tenderloin: Dinner doesn’t get much easier than this! A few ingredients you probably already have in your pantry make the most delectable sweet and savory meal.
Did you know that pork tenderloin is one of the leanest meats? It is almost as low in saturated fat as chicken breasts making it heart healthy and diabetic friendly.
Ready-made: You can freeze pork tenderloins in marinade to pull out when needed.
Grilling the meat is another great way to prepare this dish. If grilling, heat the grill, turn the meat often, and occasionally baste with the marinade.
Chicken Stir-fry Lettuce Wraps: Looking for a light dinner with substance—you will love to dig into this no-cook version of a favorite Asian wrap.
Look for pre-chopped onions for extra ease.
Rotisserie chicken makes a great short-cut.
Hoisin sauce can be found in the Asian section of your supermarket.
