Not Your Same-Old Salad

Salads are supposed to be healthy, but most folks’ idea of a salad is made up of the same old iceberg lettuce, croutons and high-fat dressing. Well salads have come a long way! These exciting varieties I want to share with you are not your old-fashioned humdrum leafy vegetables. And the best part about these salads is that they are cool and refreshing while keeping cooking to a minimum during the heat of the busy summer months.

Watermelon and Tomato Salad: A naturally perfect mix of fresh ingredients that bursts of savory basil and balsamic flavor.

– Perfect way to use leftover watermelon that sits in the refrigerator.
– Even more delicious salad when seasonal summer ingredients are used.
– Although 92% water, watermelon boasts a significant amount of immune-boosting Vitamin C.

Black Bean and Mango Salad: A delectable salad combo of juicy mangos and black beans with a punch of lime and red pepper.
– Think of beans as a nutritional bargain, as they are an inexpensive way to eat a protein and fiber rich meal.
– Can’t find mangos or don’t want to mess with peeling, mangos may be found in jars or cans in the grocery (and are really good).
– Mangos contain over 20 vitamins and minerals and are and excellent way to get your 5-9 servings of recommended fruits and vegetables per day.
