Watermelon Winners

(HealthNewsDigest.com) – Summer is here and there is nothing quite like a big slice of watermelon on a sizzling summer day. An excellent source of antioxidants, Vitamin C and lycopene, not to mention watermelon is naturally sweet and so juicy! Of course you can always slice it for an easy summer snack, but when you have leftover watermelon, it is a fun surprise ingredient in these delightful and oh-so-refreshing soup, salad, and slush recipes!

This recipe is best made ahead as it gives it time for the flavors to meld.
When purchasing a ripe watermelon, tap on it as the heavier, more hollow and high pitch sound the better.

Spinach and Melon Salad with Honey Citrus Vinaigrette: A colorful, healthy and great way to use that leftover melon in this light must-try salad.

Seeded vs. Seedless: Although those with seeds are watermelon’s natural state and there is no harm in eating them, these days you can find cultivated seedless varieties just as easily.

Watermelon Slush: What could be better on a sweltering summer day than this naturally sweet, icy beverage.

Add your favorite fruit, rum, or liquor to pump it up to another level.
Even though watermelon is 92% water, it is chocked full of nutrition with fiber, vitamins A & C, potassium and antioxidants.

Cucumber, Mint and Feta Salad: A perfect combination of crisp refreshing summer flavors.

Mint is easy to grow, even I can do it! It spreads like wildfire, so contain in pots or it will take over.
This light salad pairs well with any entrée, especially your favorite summer grilled meats.
Did you know cucumber and watermelon are cousins as they are in the same botanical family, along with squash and pumpkin?
