(HealthNewsDigest.com) – So many things about this time of year have me craving that warm and cozy feeling, cooler weather (finally!), memories of endless nights at the ballpark, pumpkins and colorful mums popping up on door steps everywhere, and {grand}kids giddy with the thought of trick-or-treating. October has so much to look forward to which is why I wanted to share some of my most warm bowl, coffee sipping, autumn aromas, sweet tooth satisfying comfort meals. Enjoy these recipes together for a fall favorite meal or serve them individually.
Chunky Corn Chowder with Kale and Sweet Potato
- Naturally sweet and savory flavors combine for a hearty delicious vegetarian chowder.
- This satisfying meal is vegetarian or add cooked chicken for protein.
- Just one cup of kale has 5 grams of fiber, 15% of your daily recommended calcium intake, 180% of vitamin A, and 200% of vitamin C!
- If you want the soup a little thicker, dissolve two teaspoons cornstarch in a little water and add.
- After refrigerating leftovers, if too thick, add more broth.
